This December, the city’s evenings will be redefined with the arrival of Roku, an elevated Japanese dining and cocktail destination set high above the Bay. Opening exclusively for dinner and late-night indulgence, Roku brings together refined gastronomy, meticulous craft, and a design narrative rich in cultural symbolism. Its rooftop setting offers a front-row seat to one of the most captivating sunset views in the city—an atmospheric prelude to the immersive night that unfolds within.
Rooted in a philosophy where tradition and innovation coexist in harmony, Roku takes its name from the six classical Japanese cooking techniques: Nukazuke (pickling), Mushimono (steaming), Yakimono (grilling), Agemono (frying), Nimono (simmering), and the art of sushi and sashimi. These time-honored methods form the backbone of Roku’s culinary identity, guiding a menu that pays respect to heritage while embracing contemporary creativity. Each dish is crafted with a minimalist eye and a vibrant palate, highlighting pristine local and imported ingredients that are treated with unwavering reverence. From the delicate precision of sashimi to the bold depth of expertly flame-kissed Yakimono, every bite reflects the restaurant’s devotion to authenticity, seasonality, and balance.
At Roku, the six classical Japanese techniques are more than methods of cooking—they shape the restaurant’s entire culinary soul. Each signature dish becomes a lens through which these traditions are reimagined: the delicate Truffle Tuna Tartare tells the story of Nukazuke, where purity and patience define flavour; Foie Gras Chawanmushi brings the gentle warmth of Mushimono, marrying French richness with Japanese restraint; while Assorted Ha Long Sashimi honours the pristine waters of the bay, a celebration of Sashimi as both craft and ritual. The journey continues as fire meets technique in the Co To Rock Abalone Liver Sauce, where the sea’s minerality is deepened by a velvet-smooth liver sauce. The crisp lightness of Van Don Tiger Prawn Tempura reflects the elegance and precision behind Agemono, while the comforting Wagyu Shabu Shabu, inspired by Nimono, embodies the harmony, softness, and seasonality at the heart of Japanese cooking. Together, these dishes do more than showcase ingredients—they narrate Roku’s philosophy: honour heritage, elevate craftsmanship, and create moments that linger long after the meal ends.
The narrative continues through Roku’s striking design. The dining room is crowned by a dramatic bamboo ceiling installation, inspired by the Vietnamese legend of the “descending dragon” that once shaped Ha Long Bay. Fluid and sculptural, the installation channels movement, power, and mythology, casting the space in an otherworldly glow. Japanese elements—wooden screens, delicate latticework, and minimalist detailing—interlace with Vietnamese aesthetics, creating a warm, textural environment where natural materials and handcrafted forms come together in quiet harmony. The result is a space where two cultures resonate in unison: the contemplative elegance of Japan entwined with the poetic spirit of Vietnam.
As night deepens, the restaurant transitions into the atmospheric allure of Star Bar, Roku’s refined late- evening venue. Here, master mixologists explore the art of Japanese-inspired cocktails with precision and creativity—but the heart of Star Bar lies in its exceptional Sake Library, an extensive collection of premium and rare labels sourced from revered breweries across Japan. Curated to accompany Roku’s culinary journey, the Sake Library encourages guests to experience Japanese dining as it was meant to be—through thoughtful pairing that enhances every nuance of flavor. Each pour is selected to complement the restaurant’s diverse expressions of the six classical techniques, elevating both dishes and drink in perfect harmony.
More than a restaurant, Roku is envisioned as an evening ritual - an exploration of flavor, texture, craft, and culture. Every detail, from design to service to the arc of the menu, is shaped around the belief that dining is a journey to be savored. The interplay of mythology and modernity, restraint and richness, quietness and intensity, invites guests into a world where tradition meets innovation in every dish, every sip, and every moment.
Roku will open its doors in late December 2025, offering dinner from Wednesday to Sunday and Star Bar service daily. Reservations will be available soon through the official website and social media channels.
