Delicious dishes and cocktails make Sol Beach House a refreshing escape from the city

The home of three delicious restaurants, each with their own focus and purpose, Sol Beach House Phu Quoc has some of the island’s most delicious dishes.

Managed by Chef Massimiliano ‘Massi’ Pauletto, the resort’s various menus are vibrant and full of flavour. From Mediterranean and Spanish cuisine in OLA Beach Club, to street food inspired dishes from around the world served in The Shack, no palate will go unsatisfied at Sol Beach House Phu Quoc.

“I aim to make your soul and your belly happy with my vision of comfort and five-star hotel cuisine,” says Chef Massi. “I eat everything, everywhere; every ingredient can be cooked in a number of different ways: sous vide, charbroiled, slow cooked, etc. I like to test the limits of each ingredient to see what I can create with it to maximise flavour and enjoyment. In my kitchen chicken, for example, is more than just poultry, it’s an edible slice of heaven.”

Having travelled the world and sampled every food item he’s come across, Chef Massi finds inspiration in every morsel. The five-star chef discovered a love of cooking at a very young age and went on to study culinary art for five years before serving as a navy cook on a submarine for three years. He travelled Europe, working in the best Michelin-star restaurants in the continent, as well as working in Malaysia, India and Africa before bringing his expertise to Sol Beach House Phu Quoc.

“Rice is one of my all-time favourite ingredients,” Chef Massi continues. “Such a vital component to the Vietnamese diet, I can turn it into risotto (creamy Italian rice), bibimbap (Korean mixed rice), makimono (Japanese rice roll), porridge, fried rice, et cetera. It’s incredibly versatile.”

The Chef’s vision for the resort’s OLA Beach Club is a Mediterranean haven of fresh grilled meats, flavourful paellas and pastas and delicious sweets. “It’s fine dining without complication or etiquette,” he says. “Come as you are, in flip flops and a bikini or dressed to impress.” Only open in the evening until late, guests and local residents don’t want to miss this recently opened pearl.

The Shack stands as Chef Massi’s favourite restaurant within the resort, if he had to pick of course. Ideal for a quick meal, diners will find fusion street food inspired dishes as well as delightful fresh juices and cocktails. “Pop over for a quick bite and spend the rest of your day on a sunbed, in the spa or paddle boarding.”

Sol Beach House Phu Quoc’s all-day dining, The Kitchen, offers a large a la carte menu of the best western and Vietnamese cuisine – salads, burgers and Phu Quoc specialities.

When asked about his favourite local dish, Chef Massi shares, “I love all of the fresh seafood here. I’m learning to master fish sauce, I’ve never used it so much before! I think I have to say ca trich (anchovy salad) is the best local dish I’ve tried.”
