The Reverie Saigon's "The Essential Element Dinner Series" continued with "The night of Earth”, a truly evocative evening that awakened all senses through culinary artistry and iconic cultural expressions. As the second element in the journey celebrating the fundamental elements of life, Earth embodies nourishment, stability, and genesis. As both a beginning and a return, The Reverie Saigon chose Earth as the inspiration for this culinary night, aiming to foster a connection between humanity and nature, and between past, present, and future through each dish and its presentation.
"The night of Earth” featured three talented chefs: Chef Marcelo Geraldini from The Reverie Saigon, along with guest chefs Luke Nguyen and Trinh Dinh Vinh from Vietnam House Restaurant. The seven-course menu embraced the rustic spirit of the earth, expertly paired with wines, and concluded with the sweet indulgence of desserts.
Inspired by the earth's fertility and nourishment, The Flavoursome Garden appetizer invites diners into a unique experience: harvesting fresh vegetables directly from an edible "soil" made of pumpernickel crumbs. This fusion of nature and artistry not only tantalizes the taste buds but also awakens childhood memories of a garden where the earth was not just a foundation, but where life began. The next dish is Phở Pillow, a modern yet familiar twist on traditional rice noodles, transformed into crispy sheets elevated with premium Wagyu beef and harmonized with tương bần – a traditional fermented soybean pastes aged in terracotta jars, offering a rustic flavor and the earthy aroma of fertile soil. Inspired by nature's gift after every rain, the Fungus Fungi dish featured intensely flavored mushrooms, finely ground and blended with a jelly-like mushroom sauce, creating captivating layers of taste. The third course, Eggs - ‘Life Begins’, celebrated the miraculous genesis where all things are nurtured and emerge from the vast earth. Next, King Crab presented a unique symphony where the essence of the sea met Vietnamese flavors, with firm, sweet crab meat infused with herbs, reminiscent of fertile alluvial riverbanks. Meanwhile, the Clay-Baked Pigeon left a lasting impression with the rustic charm of Southwestern Vietnamese cuisine. The final savory course was Ancient Iberico Pluma, a simple preparation featuring salt and pepper, evoking an original culinary philosophy and preserving the classic taste of Iberico pork. The feast concluded with the Earth dessert – Italy's famous tiramisu – an artistic spherical creation resembling our blue planet, where layers of life unfold from the depths of the earth.
The exquisite finale of the dinner came from three handcrafted bonbons in the "Breath of Earth" collection, crafted by The Reverie Saigon’s strategic partners - Socolatier. The Sleeping Spout combined the tartness of rhubarb, the gentle aroma of red peach, and a smooth finish of white chocolate, yuzu, and Madagascan vanilla, evoking the silent sprout awaiting awakening within the earth. The Heart of Earth opened up the depths of taste with Peruvian dark chocolate ganache, winter truffle, and a hint of Rémy XO, delivering a rich and multi-layered flavor like the essence hidden beneath decaying leaves. Finally, The Years Beneath – an interplay of Cru Bourgeois red wine from Haut-Médoc, blackcurrant, white ganache, fresh pear, and dark chocolate – created a harmony between past and present, between richness and depth, and freshness and elegance – like a silent but lingering note of ancient earth.
Adding to the impressive artistic ambiance, "The night of Earth” also featured the Gemstone Legendary collection from CAO Fine Jewellery – a pioneering brand in crafting high-end handmade jewelry in Vietnam. The collection was inspired by aesthetic beauty, bearing unique and unmistakable hallmarks, with a harmonious blend of artistic essence and timeless contemporary value. Each design in Gemstone Legendary utilizes rare materials, with every diamond and gemstone selected for perfect quality, alongside meticulous crafting techniques to create exquisite handmade pieces. Notably, this collection features over 200 selected diamonds and more than 140 high-grade yellow sapphires, with intricate hand-setting techniques – achieving harmony between dazzling brilliance and regal yellow hues.
