Chef Andy Huynh joins Chef Mirko Gatti from Italy’s [Àbitat] Restaurant to craft a menu born of wild foraging and island traditions.

PHU QUOC, Vietnam, September 2025Regent Phu Quoc, Vietnam’s leading luxury beach resort, will continue to add notes of surprise to its superb culinary offerings with a visit by Chef Mirko Gatti from Michelin Green Star-credited, [àbitat] set in the hills above Como, Italy this October 2025. He will be accompanied by his partner Sara, who works alongside him leading the service at their restaurant in the Lombardy region of northern Italy.

Chef Mirko will be creating a memorable gastronomic experience celebrating terroir, seasonality and sustainability on Phu Quoc Island. The Chef who has extensive experience working in some of the world’s leading restaurants in London, Copenhagen and Milan, will bring his expertise in wild foraging, fermentation and environmental research to two special evenings only.

Regent Phu Quoc’s signature restaurant Oku will transform into a stage for culinary discovery with Chef de Cuisine Andy Huynh together with Chef Mirko of [àbitat] headlining unique and exclusive Two-Night Four Hands Dinners which will take place on October 24 and October 25, 2025.

Leading up to these special dinners, the Chefs will have the opportunity to explore and forage on the island, from its tropical jungles to ocean tides and to meet with some of the resort's trusted producers. From fragrant jungle herbs to the briny sweetness of freshly caught seafood, and from honey still warm in its comb to the pepper’s slow-building heat, each ingredient will find expression on the plate. Chef Mirko will also be able to research and take-in local culinary traditions and innovative techniques to allow him to draw inspiration from the island and the richness of the territory in the dishes he creates following.

The menus for these gourmet events will only be finalised the day prior to them taking place in order for them to be inspired by the Chef’s daily exploration and the finest seasonal ingredients. As a result, each dish will be an authentic expression of ingredients from the island and the shimmering seas surrounding. As at [àbitat], Sara will bring their personalised and beautifully nuanced service to the meal and also elevate the beverage offerings with non-alcoholic pairings: crisp kombuchas, velvety infusions, and sparkling ferments with each sip echoing the island’s rhythm.

These culinary events will once more showcase Regent Phu Quoc as an outstanding dining destination.

A Menu To Be Revealed Just Before the Event
Every dish will tell a story - of foraged wild ingredients, local Vietnamese culture and culinary creativity. The Chefs will finalise the menu only the day before each dinner to ensure it captures the freshest inspirations and the most interesting flavours of Phu Quoc island.

This will be an intimate, sensory experience designed to delight limited number of guests per night.

Originally hailing from Como, Italy, Chef Mirko Gatti, is a prominent voice in the new wave of sustainable Italian cuisine. His wide international experience includes working in London and Copenhagen in renowned restaurants such as Chiltern Firehouse, City Social, Noma and Relea collaborating with some of the most influential chefs of our time including Nuno Mendes, Jason Atherton and Rene Redzepi. This experience has influenced his gastronomic vision as intellectually driven and deeply rooted in nature.

Born in Dak Lak, Vietnam and raised in California, Andy grew up between land and sea, discovering early the value of each ingredient and their cultural meaning. He honed his Japanese techniques with Nobu for many years, before joining the team at Regent Phu Quoc to open the contemporary Japanese - French restaurant Oku. His creativity fuses a flurry of influences, from modern art to far-flung travel, but his dishes are always rooted in a deep respect for the finest ingredients and products.
